Cassia (ืงืœื•ืคื” โ€” Kiddah/Ketziah) is one of the 11 sacred ingredients of the Temple Ketoret. It is explicitly mentioned in the Torah (Exodus 30:24) as one of the holy anointing oil spices: "and cassia โ€” five hundred shekels, by the sanctuary shekel." It also appears in Psalm 45:8: "All your garments are fragrant with myrrh, aloes, and cassia."

Cassia differs from Ceylon Cinnamon (Cinnamomum zeylanicum) in its higher cinnamaldehyde content, stronger warming properties, and deeper, more intense aroma.
